Open Sourdough Albany Farmers Market Sandwich

Garlic clove, minced

Goats cheese, sliced
Fresh basil leaves
Salt and Pepper to taste

Step
Preheat the oven to 180C fan.
Place slices of sourdough on a baking tray and drizzle with 2 tbspn of the olive oil.
Mix the remaining oil with the minced garlic. Put the tomato slices in a bowl, add the garlic and oil, then season with salt and pepper and turn until all slices are coated.
Arrange the tomato slices on separate baking tray and then place both trays in the oven for about 10 minutes.
Layer the slices of tomato and goats cheese on the toast. Add the poached egg if using. Top with basil leaves, sprinkle with more salt and pepper to taste and serve.
