Quick Chicken

small onions (e.g. gladalan brown or purplette mimi red) 12
Lebanese eggplant, round diced 2
chili, deseeded and finely chopped 1
apple, cored and chunked 1
chicken thigh or breast meat, diced 400 Gram
green stringless beans, sliced into 2 cm sticks 8
oil for saute
In a wok or large frypan heat a small amount of oil until hot. Add onions and stir frequently for 2 minutes.
Turn heat down to medium and add eggplant, chili and apple. Cook and stir for 6 minutes.
Add chicken and cook for 5 minutes, turning frequently. When chicken is nearly cooked, add beans, pepper and any herbs you wish. Cook until chicken is fully cooked through.
