Spinach and Basil Dip

This delicious dip is a favourite recipe from Harma Mostert of Mostert’s Fresh Veggies.  It’s a great way to use a big bunch of Mostert’s basil in summer.

Ingredient: Garlic clove

Ingredient: Parmesan cheese, cubed
Quantity: 70
Measurement: g
Ingredient: Spinach
Quantity: 100
Measurement: g
Ingredient: Basil leaves
Quantity: 20
Measurement: g
Ingredient: Cashews
Quantity: 100
Measurement: g
Ingredient: lemon juice
Quantity: 40
Measurement: ml
Ingredient: olive oil
Quantity: 60
Measurement: ml
Ingredient: pinch of nutmeg
Ingredient: salt
Ingredient: pepper
Blitz cheese and garlic until fine. Add remaining ingredients.
Pulse briefly 3-4 times to achieve a chunky consistency.
Leave for 1 hour before using.
